Chocolate Chip protein banana muffins

This healthy dessert, snack or breakfast is packed with protein, complex carbohydrates, healthy fats and fiber!

I think I have perfected the perfect chocolate chip banana muffin that is nutrient dense and delicious! I love to take my favorite foods from growing up and find ways to make them a little bit healthier. This way I know what is going into my body and I know I will feel good after eating them. Banana bread is one of those foods that just brings comfort and nostalgia and it is so easy to make!

This recipe makes 32 muffins

What you will need 

  • Ripe bananas 

  • Bob’s Red Mill vegan egg mix, flaxseed egg, or regular eggs 

  • Maple syrup 

  • Almond butter (can use peanut butter)

  • Unsweetened coconut yogurt (can use any yogurt you'd like)

  • Nut milk or regular milk

  • Vanilla extract

  • Oat flour (blended oats)

  • Protein powder ( I used Ritual vanilla protein powder)

  • Baking soda

  • Salt

  • Cinnamon

  • Dark chocolate chips 

Mix together all wet ingredients 

6 ripe bananas mashed

4 vegan eggs 

6 tbsp maple syrup 

60 grams of almond butter 

60 grams of coconut yogurt

6 tbsp nut milk 

2 tbsp vanilla extract


Mix together dry ingredients 

300 grams oat flour

100 grams protein powder

2 tsp baking soda 

½ tsp salt

Dashes of cinnamon


Mix dry ingredients into wet ingredients and stir until well combined. 

Fold in a hefty amount of chocolate chips (or as much as you'd like) : )


Spoon 2 tbsp size scoops into each muffin holder

Top with more chocolate chips 

Bake at 350 F for 15 minutes 

Let cool for 15 minutes 

These are so soft and moist! They keep well in the refrigerator for about a week and then place in the freezer if they even last that long!

17 grams of carbohydrate 

3 grams of fat
